We deliver only on Saturdays and Sundays because a full packer brisket spends 12 to 16 hours in the smoker, and we will not sell it reheated. Every order is made within hours of arriving at your door.
Weekday Delivery Would Mean Reheated Food
Delivering on a weekday would force us to smoke in advance, hold the food in cold storage and reheat it, and that costs you quality. Our pork belly goes through a low-and-slow process that can't be shortened without sacrificing the bark, the tenderness or the clean bone-pull. Pulled pork is its own multi-hour commitment.
Do the maths on a weekday model. For food at your door by 6pm on a Tuesday, the smoke needs to start around 2am. You would need an overnight production team, cold-chain logistics to hold the food safely, and a reheating step that inevitably costs quality.
Weekend-only delivery avoids all of that. We smoke on Friday night through Saturday morning for same-day delivery. Sunday orders get their own fresh smoke.

Our customers are feeding ten people for a birthday, hosting colleagues for a housewarming, or doing a Saturday afternoon spread that needs a centrepiece. A Premium Product With Limited Capacity
Our average order sits above $100, and the price pays for brisket selected with care, a rub we have refined over time, real wood smoke, and delivery fresh on the day it was made.
Restricting delivery to weekends lets us control every variable. We know exactly how much we are producing, we know the smoke times down to the hour, and the delivery window is tight enough that the food arrives at its best. If we expanded to seven-day delivery, something in that chain would have to give, and we are not willing to let it be the food.
We would rather be exceptional two days a week than average every day. That means turning away orders on days we don't deliver and telling customers we're sold out when we hit our production capacity.
How to Order, and What We Are Not

We are a food delivery business. What you do with the food from there, whether you're feeding four people or forty, is your business. We are not staffing your event, setting up your table or managing your serving timeline.

Why can't I order for a weekday delivery if I give enough advance notice?
It's a quality issue, not a scheduling issue. Our entire production model is built around same-day smoking and delivery. We'd rather say no to the order than deliver something we're not proud of.
How far in advance should I order?
Order at least three to four days before your preferred delivery date. For popular weekends, public holidays, long weekends and school holidays, book even earlier. We operate with a fixed production capacity, and once slots are full, we can't add more.
