They’re smoked low and slow until the meat pulls cleanly from the bone while still retaining a satisfying bite. One dino rib feeds approximately 1 to 2 people. For a party, always order at least one more portion than you think you need. Dino ribs disappear.

Pork Belly

Oven: Keep the meat covered in foil with a little stock or reserved juice. Warm at 120–150°C until heated through—usually around 15–25 minutes, depending on the portion size.

Golden rule: low heat, a bit of moisture, patience. Smoke flavour is delicate — blast it with high heat and you kill it.
