Smoked Beef Short Plate: The Cut Brisket Lovers Should Actually Order

4 min read

The cut to order is our Smoked Boneless Beef Short Plate, 500g for S$70. It is the navel end of brisket, the fattier and juicier part, smoked low and slow until it pulls apart under very little pressure.

Why the Navel End Beats the Lean Flat

The navel end suits a long smoke better than the flat because its extra fat keeps it moist. A whole brisket comes off the chest in two parts. The flat is the lean, rectangular half that slices neatly and holds its shape. The point sits above it, thicker and heavily marbled. The navel end is the fattier continuation of the same region, and it renders into something softer and juicier over a long cook.

Intramuscular fat moves through the muscle as it renders and keeps it moist from the inside. Lean cuts have less of that protection, which is why an overcooked flat turns chalky while a well-marbled cut stays forgiving.

Good barbecue shows four signs:

  • Bark all the way round. It should be dark and dry-edged, not sticky.
  • Rendered fat, not firm fat. Firm white seams between the fibres mean it came off the heat early.
  • It should bend, not snap. A slice should sag under its own weight and hold together.
  • A smoke ring is a clue, not proof. Curing salt can also produce the pink band.

What We Sell and How Much to Order

The Smoked Boneless Beef Short Plate is S$70 for 500g, available in small, medium and large portions. It also sits in two platters. The Hunter’s Platter, S$128, pairs it with Smoked Pork Belly and sides for four to six people. The Chieftain’s Platter, S$185, adds Smoked Pulled Pork for six to eight. Our Smoked Beef Rillette is S$23 for 150g, made from the same smoked beef and set into a spread for toast or crackers.

We do not sell burnt ends. They come from cubing the point and returning it to the smoker for a second render, and they are not a standing item on our menu. To ask about them for a particular weekend, message us before you order.

Plan 200-250g of cooked meat per adult across all meats when barbecue is the main event, or 250-300g for bigger eaters. Children under twelve eat about half. For ten adults, around 2.2kg in total works, split across two or three cuts. A 500g beef short plate, a dino rib and a pork belly covers that range well. Add roughly one large side for every two people.

Slicing, Serving and Reheating

It arrives fully cooked, so you are warming it, not cooking it. The microwave is the quick option: microwave-safe dish, damp paper towel, medium power, one-minute intervals, rearranging between each. For a larger portion, use the oven at 180°C, loosely covered with foil, eight to twelve minutes, pulled when the centre reaches 65°C, then rested two minutes.

Slice across the grain, about the thickness of a pencil. The grain changes direction through the cut, so look before each few slices. Serve it warm rather than piping hot. Leftovers keep two to three days in the fridge and should go in within two hours.

Frequently Asked Questions

Is beef short plate the same as brisket? It is the navel end of the same region, fattier than the lean flat most people picture. Richer and more forgiving over a long cook.

Do you sell burnt ends? Not as a standing menu item. Ask us on WhatsApp before ordering if you are hoping for them on a particular weekend.

Is it halal? No. Our meats are not halal-certified and we smoke pork in the same kitchen.

How much for eight people? Around 1.8kg of meat in total. A 500g short plate as one of two or three cuts, plus three or four large sides.

Can I ask for a leaner cut? Leave a note with your order and we will try. Our beef is smoked with a balance of fat for tenderness, so leaner portions will be less juicy.
